I love the holidays, Thanksgiving and Christmas have always been a big deal for me growing up. I always thought it would be awesome to be the host, and this year my parents are traveling to Oregon from Arizona for Christmas since my sister also lives in Oregon (lucky them! haha). We are so excited to have a full house and I’m planning to make way too many pies, a bunch of vegan tamales and Mitchell is supposed to play Christmas songs on his mandolin. If we are lucky we’ll have a white Christmas then all my dreams will come true.
Every celebration is so special with Meadow, every morning she looks at the tree and says “wow” she is just the cutest little babe. Last year was her first Christmas and I had no idea how she was going to react to taking pictures with santa. It turned out really cute and she was all smiles. This year she is older and more aware, stranger danger, and it will be interesting how she likes santa.
This easy vegan pie crust recipe is my go to recipe for all things pie, it is super simple to make, only four ingredients, and it takes less than 10 minutes. The result is flaky and just like your nostalgic old fashioned pie crusts. I used the cast iron in the picture because I was making a cast iron apple pie, which I will share the recipe for in my next post. I’ve been loving using cast iron for everything, I highly recommend getting one if you don’t already have one, for savory dishes and desserts. The pie crust didn’t stick at all, easy peasy. Do yourself a favor and get a cast iron skillet for your holiday meal preparation, click the above photo for the one I am using.
- 2 1/4 C Flour
- 1 Tbspn Sugar
- 1 tsp Salt
- 1/3 C Water
- 1/2 C Vegan Butter (sticks)
- Mix together the dry ingredients
- add the solid butter and mix together with your hands until crumbly
- add water
- knead it until a smooth ball
- You can separate the dough for a bottom and top crust
- Roll it out thin
- Add your toppings and bake at 350 for 35 minutes
